Apple and Blackberry Crumbly Pudding
Why should outdoor cooking stop with the savouries, when the desserts are soo good?!
This Crumbly Pudding not only oozes comfort, but also embraces the smokiness of wood-fired cooking to add intense flavour that makes you go for seconds. Served straight from the pan with a dollop of vanilla ice-cream on top - beautiful!
We'd recommend preparing this in the kitchen before cooking your main meal on the Grill, so that you can easily wack it over the embers whilst you're enjoying your meal.
INGREDIENTS:
120g Flour
50g Oats
60g Caster Sugar
60g Unsalted Butter (Cut into pieces at room temp)
3 Bramley Apples (peeled, cored and diced)
100g Blackberries
100g Demerara Sugar
1tbsp Cinnamon
To serve
Vanilla Ice-Cream
METHOD
- Start by adding the flour, oats and caster sugar into a large mixing bowl.
- Add the butter and start to rub the mixture together through your fingertips until it resembles a breadcrumb like texture.
- In a cast iron pan, place the peeled and chopped bramley apples and blackberries. Sprinkle 50g of the demerara sugar over the apples and blackberries, then dust with the cinnamon.
- Top the apples and blackberries with the crumble mixture and press down slightly.
- Finally top with the rest of the demerara sugar.
- When ready to cook, place on your grill frame over a bed of embers and cook for 30 minutes. Place a lid on the pan and add some embers on top to help brown the crumble or alternatively use our Tapa (see accessories) to help circulate the hot air over the crumble and encapsulate the smokey aroma of woodfired cooking.
- Finally, carefully remove from the pan, place on a heatproof mat, top with some vanilla ice-cream and enjoy!
